A2 milk from indigenous Gir cows — a breed that gives a fraction of what a crossbreed does, which is exactly why almost nobody uses it commercially.

Every batch is tested under COA by a NABL-accredited, FSSAI-notified laboratory. No COA, no dispatch — that is the rule, and there are no exceptions to it.

You don’t have to take our word for it. Every batch is
tested under COA by an independent NABL-accredited laboratory before it is
allowed to ship, and the COA for the batch in your jar is published on this
site. Match the batch number on your label and read it yourself.
Because roughly 25–30 litres of A2 Gir cow milk go into
every kilo, a Gir cow yields far less than a hybrid, the bilona process takes
days rather than minutes, and every batch is independently tested on top of
that. There is no version of this that is also cheap.
Bilona is the traditional process ghee was made by before
it became a factory product. It takes longer and costs more, and it is the
reason this ghee has its grain, its colour and its aroma — rather than the
flat, uniform texture of ghee made the fast way.
The opposite — that grain is the marker of properly made
ghee. Factory ghee stays uniformly smooth. Yours will change texture with the
season, because real fat behaves like real fat.
Because we don’t test once and coast on it. Every batch
is numbered, and every batch is tested under COA before it carries the Sage’s
Secret name. No COA, no dispatch. You can pull up the COA for your batch here
and match it to the number on your label.
No. Keep it airtight, out of direct sunlight, and always
use a dry spoon. Moisture is the only real enemy which is why our moisture
reading of 0.18% matters.
Our lab found no detectable milk protein, no carbohydrate
and no sugar ghee is clarified butter, and the milk solids are removed during
cooking. Many people who avoid milk use ghee without trouble. If you have a
diagnosed dairy allergy, please check with your doctor first.
Yes. Ghee holds up to around 250°C higher than most
refined oils and far higher than butter.
